Crusty Damper

Ingredients
- 3 cups self raising flour
- ½ cup of water
- ½ cup of milk
- 1 – 2 teaspoons salt
- 90gms of melted butter
- 1 egg
- extra milk for glazing
- extra flour for dusting
Method
Step 1 Preheat oven to moderately hot 210 degrees
Step 2 Brush oven tray with melted butter and oil
Step 3 Sift flour and salt into large mixing bowl, make a well in the centre. Combine butter, egg, water and milk and add to well. Stir with knife until combined
Step 4 Turn onto floured surface and knead 20 secs or until smooth. Transfer dough to tray. Press out to a 20cm round
Step 5 Score into 8 sections (1cm deep) with a sharp pointed knife. Brush with milk and dust with flour.
Step 6 Reduce heat to moderate 180 degrees. Bake 15 minutes or until golden and sounds hollow when tapped
